Amanda S. Holliday MS, RD, LDN, is a Clinical Assistant Professor and the Director of American Dietetic Association Programs within the Department of Nutrition at the Gillings School of Global Public Health located at the University of North Carolina at Chapel Hill.  She is the program director for the Coordinated Master’s Program in Public Health Nutrition.  Her areas of expertise include medical nutrition therapy and nutrition and aging. She teaches several courses; these include: Medical Nutrition Therapy (I, II, Case Seminar), Nutrition and Aging, Nutrition Assessment and Counseling and a 480 hour hospital-based practicum for future Registered Dietitians. She also serves as the dietitian at the geriatric evaluation clinic at UNC Hospitals and works with several other disciplines to incorporate nutrition into their course offerings.

Mrs. Holliday serves in several leadership roles within the field of nutrition.  She is the President-Elect of the North Carolina Dietetic Association and the Past-President of the Durham Chapel Hill Dietetic Association.   She serves on the Nutrition Informatics Taskforce within the American Dietetic Association and the Health Advisory Board for the Orange County Department on Aging.   Other professional affiliations include the Healthy Aging Dietetic Practice Group, the Dietetic Educators of Practitioners Practice Group and the Dietitians in Nutrition Support Practice Group.  She also serves as faculty advisor to the Healthy Heels student group.  Mrs. Holliday began this organization during her first year at UNC  to train undergraduate students how to prepare healthy meals in their residence halls.  Mrs. Holliday also implemented the first performance based clinical ladder for Registered Dietitians and Registered Dietetic Technicians within the State of North Carolina.  Mrs. Holliday completed her undergraduate training in nutrition and geriatrics from Appalachian State University in 2000, and received her master’s degree in clinical nutrition from Rush University Medical Center in 2002.  In 2010 she was awarded Outstanding Dietetic Educator by the North Carolina Dietetic association and The Dietetic Educators of Practitioners Practice Group and in 2009 she was honored with the Delta Omega Excellence in Teaching Award and was nominated for Member of the Year by the North Carolina Dietetic Association. 

Mrs. Holliday provides workshops and guest lectures on implementing the Nutrition Care Process and International Nutrition and Dietetic Terminology as well as Geriatric Nutrition.
